Citrus and herbal salt recipe

I love making all kinds of herbal salts. Such a simple way of getting more flavour and nutrients into our meals. I use whatever is in abundance. At the moment, in early spring, that means three cornered garlic (onion weed), citrus and rosemary.

Ingredients:

I use a ratio of roughly 1:1

  • Herbs you have in abundance

  • High quality salt. We use local pink lake salt.

Method:

The easiest method is to dry all the herbs and citrus peel and then grind them finely in a coffee grinder and combine with salt.

However you can also grind all the ingredients wet and then spread the mixture on a plate and put it somewhere warm and dry - outside in the sun or near the fireplace - and turn frequently until excess liquid has evaporated from the mixture. It doesn’t need to be perfectly dry as the salt acts as a preservative.
